Fresh Produce Temperature Requirements
Fresh fruits and vegetables have strict temperature ranges that vary by commodity. General fresh produce: 34–38°F. Tropical fruits (bananas, mangoes): 55–58°F — they suffer cold injury below 50°F. Berries (strawberries, blueberries): 32–34°F. Leafy greens: 32–36°F. Potatoes: 40–55°F depending on variety. Always confirm the shipper's specific temperature requirement — do not assume.
Meat and Poultry Temperature Requirements
Fresh beef, pork, and lamb: 28–32°F (just above freezing). Fresh poultry: 26–32°F. Frozen meat and poultry: 0°F or below. Ground beef: 28–32°F. Processed meats and deli products: 28–34°F. Meat products are the most temperature-sensitive reefer category — any warm excursion risks bacterial growth and FDA non-compliance.
Dairy and Frozen Temperature Requirements
